1 cup jeerakasala rice or basmati rice
2 cups water
1/2 tsp jeera, 1/2 tsp saunf, 1 bay leaf, 3 -4 cardamoms, 1 cinnamon stick, 3-4 cloves, 1/2 mace.
1 1/2 tbsp groundnut oil
small piece of ginger, 4 green chillies
1 cup methi leaves (fenugreek)
1/2 tsp turmeric powder
1 cup fresh green peas
sea salt as needed
Note: once steam comes through the hob of the cooker, reduce the flame to the lowest and let it cook for exactly 7 mins (do not keep the weight on the hob). After 7 mins, turn off the flame and let it rest for 15-20 mins. After 20 mins open the cooker and lightly mix the pulao and serve with raita or side dish of your choice.
